During this half day workshop, from 9am to 4pm, you will embark on a journey of exploration and hands-on learning. Led by our expert foragers and herbalists, Matt and Ansley, you will delve into the fascinating world of wild plants, herbal infusions, and gut health.

Workshop Highlights:

  • Identifying and Harvesting Wild Greens: Learn to distinguish various wild bitter greens that thrive in the local area and discover how to responsibly harvest them. Through immersive field sessions, gain the knowledge required to confidently identify these flavorful and nutritious greens.

  • Creating Herbal Vinegars: Unleash your creativity as you delve into the art of crafting herbal vinegars. Discover the healing properties of herbs and learn the techniques to create your own unique blends. From selecting herbs, preparing infusions, to bottling your creations, we will guide you every step of the way.

  • Caring for Kombucha: Dive into the world of kombucha, a fermented tea renowned for its probiotic benefits. Discover the secrets behind brewing this ancient elixir and explore its potential for gut health. From nurturing your SCOBY (Symbiotic Culture Of Bacteria and Yeast) to flavoring and bottling your own kombucha creations, this workshop will demystify the process.

WORKSHOP SCHEDULE

10:00 AM - 10:15 AM: Arrival
We like a slow start to our day. Find a parking spot, set up your chair, meet and greet, go to the bathroom.
10:15 AM - 10:30 AM: Introduction
We will begin the day with an insightful introduction to foraging and easy fermented foods (vinegars + kombucha) in the Pacific Northwest.
10:30 AM - 12:00 PM: Plant Walk
Following the introduction, we will embark on a guided plant walk where you will learn to identify and harvest various spring edible plants.
12:00 - 12:30 PM: Short Break
Break time to eat lunch, refresh, use the restroom, and chat with fellow participants after the plant walk.
12:30 - 1:00 PM: Herbal Bitters
You will learn why bitters are important spring tonics and how to make them using wild harvested roots and other complementary fruits and spices.
1:00 - 2:00 PM: Wild Bitter Greens
In this session, our experienced instructors will help you prepare wild greens into a recipe. Exact recipes and greens depend on availability.
2:00 - 3:00 PM: Herbal Infused Vinegars
Discover how to make vinegar, the uses of herbal infused vinegars, and create your own infused vinegar and oxymel to take home.
3:00 - 3:30 PM Kombucha Care
Explore the world of kombucha, what to use it for, and learn how to care for it!
3:30 - 4:00 PM: Closing
Ask all the questions you want! Engage with your peers. Taste recipes. This is when we'll show you how you can find more information or take your skills to the next level.
